CraBBq Oysters

What you need;

12 oysters
12 Tablespoons Crabanero brand CraBBq sauce.
4 cooked strips of bacon (optional, crumbled)12 slices of lime

Fresh cracked pepper

What to do;

1)Turn you grills burners to high and close lid allow to heat for 15 minutes. 2) Scrub oysters with a brush, using cold fresh water. 3) Pop oysters onto the hot grill close the lid, after about 4-5 minutes the oyster will start to open, when they do take oysters off the grill and place on a plate to allow to cool for about 15 minutes(you have just, easily circumvented the anxiety of having to shuck the oysters), at this point you can turn you grill down. 4) After the oysters have cooled, use a small knife to pry off the top shell, discard top shells. 5) Place 1 tablespoon of CraBBq sauce
( you could add some cooked bacon at this point, about 4 strips chopped and distributed equally among oysters), and fresh cracked pepper on each oyster. 6) Place oysters back onto low grill, close lid for about 6-8 minutes, when you open the lid the oysters should be bubbly, and the liquid should have reduced a bit, if your oyster haven’t begun to bubble, turn up the grill close the lid of your grill and give them a few more minutes. When oysters are perfect, remove from the grill and put on a serving plate, garnish with lime slices and serve.

Serve with a nicely chilled Albariño, a coastal Spanish or Portuguese white, sort of a cross between a Sancere and a Gewürztraminer.
Albariño are generally very refreshing and tend to run off dry to not quite sweet and have loads of fruit, that go well with grilled oysters and has the ability to balance the smoky sweet, spice of the CraBBq sauce and acid of the dish provided by the limes.
